You should not assume so. Exposed parts are engineered to a specific body's spindle, spacing and wall depth, and even within one manufacturer ranges differ. Check with the supplier before ordering rather than after the tiles are up and the wall is closed.

How deep can the finished wall sit from a concealed body?

Every concealed body has a stated depth range marked on it, within which the exposed parts will reach and seat properly. Tile plus adhesive plus levelling bed can easily add twenty millimetres beyond what was assumed at first fix, so check before ordering.

Will it work on a gravity-fed overhead tank without a pump?

Where no minimum pressure is stated, ask before committing. As a rule a rain shower fed from a low overhead tank with a metre or two of head will underperform whatever the fitting. If the tank sits low relative to the bathroom, a pressure pump is usually part of the answer.
